JOB OVERVIEW

Accountable for the quality, consistency and production of the sushi kitchen . Exhibits culinary talents by personally performing tasks while leading the staff and managing all sushi bar related functions. Coordinates menus, purchasing, staffing and food preparation for the sushi bar. Works with team to improve guest and employee engagement while maintaining the operating budget. Must ensure sanitation and food standards are achieved. Develops and trains team to improve results.

DUTIES AND RESPONSIBILITIES:

  • Work with Executive chef and Executive Sous Chef to understand current restaurant trends and needs.
  • Maintains standards of quality and service of sushi station and adhered to by employees.
  • To interact with the customers around the Sushi Counter
  • Responsible for the production and have knowledge and competency in sushi menu items.
  • To assist in the creation and preparation all varieties of fish in the sushi preparation area according to the standard recipes, with flair, creativity and quality standards that exemplifies the company’s high standards and expectations.
  • Assists in overseeing sushi inventory, purchasing and food cost.
  • Ability to prepare food for consumption with background knowledge of proper techniques and equipment to be used. 


JOB QUALIFICATIONS

  • Proven experience as Sushi Chef in fine dining setting
  • Food Knowledge, Preparation, Production and Safety: 
  • Must be able to clearly explain how food is prepared, cooked, and served to guests. 
  • Knowledge of industry standards on food storage and handling techniques is highly desirable. 
  • Knowledge of Fish fabrication / butchering
  • Where applicable, holds a state and/or local food handlers card. 
  • Advanced knife skills.
